Recipe: Welsh Rarebit

Sometimes called Welsh Rabbit, this is a classic and simple grilled cheese dish from the British Isles that makes an easy lunch or dinner during the winter, served with a salad or soup.
3 Egg Yolks,
50 ml Brown Ale
1 tbsp Dijon Mustard
1 tbsp Worcestershire Sauce
200 g Cheddar cheese
3 Shallots, finely chopped,
Sliced and toasted bread
Mix all the ingredients together in a bowl.
Preheat the broiler
Toast the bread on both sides
Spread a layer of the cheese mix on top, quite thickly, and broil until brown and blistered.
Serve immediately.
