Abbay de Belloc is made from the raw milk of local red-nosed Manech ewes in the Pays Basque region of France. For centuries, Benedictine Monks in the Abbay of Notre-Damne in Belloc have produced this firm, pearl-colored cheese. The rind is thick and crusty, enclosing a beautifully dense and surprisingly supple paste. It has a distinct lanolin aroma, with a concentrated flavor that balances fruity and nutty tones. A red wine from Bourdeaux is a great pair for this cheese, along with many well-rounded reds.
