Meadow Creek Dairy is located in mountainous southwest Virginia near the town of Galax. Their cheeses draw inspiration from various traditional European cheeses, with this one loosely resembling a French Tomme. The flavor is very delicate and raw tasting with strong vegetal notes and a spicy finish. The texture is very tight and chewy with a musty strong aroma. The finish is lengthy but mellow. This is a perfect cooking cheese as it melts very smoothly. The flavor is robust enough, however, to serve the cheese on its own.
