Cobb Hill Cheese making is a part of an intentional community of 23 households in Hartland, Vermont. Amongst other agricultural products, Cobb Hill Farm produces two raw milk cheeses from a small herd of Jersey cows. The farm uses no chemical fertilizers, additives or feeds. Cobb Hill produces only about 45 wheels a week, so this cheese should be prized. The wheels are aged a minimum of eight months. Ascutney is based on the recipe for Swiss Appenzeller, and it has a natural rind. The cheese has a firm texture without being dense. Small, evenly spaced "eyes," or holes, dot light yellow Ascutney's paste. The flavor is gentle and smooth, with a sweetness that develops gradually and a distinct nuttiness. This cheese is delicious alongside a garlicky salami or with a nice berry jam. Finish all of it down with a strong IPA for a hearty snack.
