Robiola is made in the Piedmont and Lombardy regions of Northern Italy. Its shape, taste, and even color can vary quite a bit in depending on the producer. To complicate things even further, it can be made with any combination of goat, sheep or cow’s milk.
We source our robiola from the Caseificio dell’Alta Langa, the dairy responsible for another delectable mixed-milk cheese: La Tur . From their modern facility in Bosina, they churn out high quality cheeses made from traditional Italian recipes. Their robiola is a rich, silky blend of cow’s and sheep’s milk. Its taste is rather mild and salty with hints of mushrooms.
