Brillat-Savarin is the silk robe of cheeses. It's not practical, but you want it. You might even be willing to throw a child's tantrum for it. Silky smooth and enriched with cream, it's Decadence (capital "D" required) at its best.
Brillat-Savarin is a soft, round, white cheese with a light, fluffy white rind. Describing the taste gives us the opportunity to use adjectives like velvety, downy, and buttery. The chief flavors are butter, salt and cream, accompanied by hints of mushroom and hazelnuts.
Henri Androuet was the creator of Brillat-Savarin, which he named after the 18th century gastronome, Jean-Anthelme Brillat-Savarin. Monsieur Brillat-Savarin coined the phrase: "Tell me what you eat and I will tell you what you are."
Today Brillat-Savarin is made by three dairies in the Ile de France region. We source our Brillat from Rouzaire’s Fromagerie de Pre-Foret-which happened to win a Super Gold Award at the 2010 World Cheese Awards. Bravo!
