Unique Irish farmhouse cheese modeled after a Dutch Gouda and made by Dutch immigrants to County Cork. Nutty, and sweet with a nice caramel/butterscotch finish. The mark of a great Gouda is a balance between salty and sweet, and a nice full rich flavor with a really long finish. Pronounced (koo-LAY).
