About this item
Mary Keehn is a big deal in the American cheese community. Her foray into cheese making began in the 70s, when she started raising Alpine goats in order to have a source of healthy milk for her children. This led to a passion for goat breeding that got a bit out of hand, and as a result, Mary found herself owning fifty goats. She had more goat milk than her kids could drink, so she set about experimenting with cheese making in her kitchen. By 1983, Mary had founded Cypress Grove Chevre and was doing her thing in a well-equipped facility.
The Cypress Grove chevres have a mellow tang balanced with a creamy texture. The creaminess is due to the milk Mary uses, which is high in butterfat. Look below for some examples of the kinds we carry in the shop:
• Purple Haze is flavored with lavender and wild fennel pollen
• Plain is fresh goat cheese in a convenient log shape
