This old dairy farm located south of Boston has been in the family for more than a generation. They purchase their Jersey and Holstein milk from several surrounding farms but do not homogenize the milk. The resulting cheese, aged for 6 months, has won numerous awards since its launch in 1996. This blue cheese has surprisingly tight texture that opens on the palate like cool butter. The cheese is tangy with a good blue punch and just salty enough to complement the natural sweetness. This cheese is delightful on its own or serve it in a salad with some apples and bacon.
