It's mind-blowing. It pulverizes any previous notions of generic Swiss cheese. And we're not the only ones to sing this Gruyere's praises: it earned first place in the 2008 World Cheese Championship.
The source of this particular Gruyere's excellence is the old-school Swiss recipe that Gourmino painstakingly employs. Raw milk is taken once in the morning and once in the afternoon from very small herds of cow.
