Lorraine Lambiase and Sheila Flanagan run a 50 acre goat and sheep farm in Thurman, New York just below the Adirondack Mountains, where they turn out some delicious fresh mixed milk cheeses. Among them is Kunik, a sumptuous bloomy rind triple cream made from pasteurized goat's milk with a little something extra – rich, fatty, buttery Jersey cow cream. This cheese is perfectly delicious and addictive. The paste is rich, yet delicately nuanced with definite herbaceous, green flavors from the delicious diet of the frolicking goats that provide the milk. Try it with the rind for a whole different level of flavor; taste the traditional barnyardy, goaty goodness and lactic tang you expect and love from a fresh goat's cheese.
