Two words: Yay beer! Pond Hopper is a semi-hard goat's milk, gouda style cheese that is washed with Cascade Mountain hops from a neighboring microbrewery in central Oregon. The flavor is super sweet and tangy with those delicious caramel crystals everyone loves from a gouda. The elevation in the Cascades mirrors that of the Alpine region: cool, beautiful and full of sunshine for most of the year, allowing proprietor and cheese maker Flavio DeCastihos to produce the finest milk from his Saanen and Alpine goat herds. And as we all know, where happy goats roam, good cheese follows. Pond Hopper is covered with a wax rind and aged for 2 – 3 months before it reaches our door. It offers a wonderful layering of flavors from start to finish: first the burned caramel and a tangy bite from the hops, then a creamier, nuttier flavor with a wonderful crunch to finish off the bite. Also easy going and widely accepted by the less adventurous of palates, this cheese is a great snacking food, especially when paired with your favorite crisp beer.
