Founded in 1864, Consider Bardwell Farm was the first cheesemaking co-op in Vermont. Today, it is run by a group of dedicated artisanal food experts who have been revitalizing the farm's traditions by creating some seriously tasty, high quality and of course all natural goat's and cow's milk cheeses. Rupert is an aged, raw Jersey cow's milk cheese that approaches the regal heights of the great alpine cheeses like Comte and Gruyere. It is rich, sweet, nutty and complex, leaving a lasting impression on the palette long after the initial meeting. It offers a sweet, lactic, fruity tanginess on the front, giving way to a robust nuttiness and finally a perfectly balanced finish. The texture is also noteworthy, mimicking the alpines, but offering a slightly lighter over all feel than some, partly due to the delicious sweetness it possesses. That superior flavor only comes from happy cow's, like the ones at Consider Bardwell who graze on delicious flowers, herbs and grasses throughout the seasons. Try this cheese with a good Belgian beer, or experiment with your favorite summer brew for a refreshing pairing.
